The purpose of this work was to validate the cookware suitable for induction cookers that is currently available in Ecuador and it was determined that it complies with the ASTM F 1521 -3 standard according with its chemical composition and the required energy effi ciency within the “Standard test method for effi ciency in cookware”.

At fi rst the energy effi ciency for the tested pots was established (2 criteria for differentiation, 7 types of pots in total) in several cookers (4 models in total), according to NTE INEN 251 standard.

Besides a study of the chemical composition of the cookware material was made (6 models in total) in order to ratify the suitable materials for induction that will not alter the organoleptic properties of food; according to national and international technical standards.

This research aims to contribute in the Ecuadorian Productive Mix change, when replacing the use of LPG for cooking with the electricity in induction cookers.
