Modelación de Sistema Termosolar para Pasteurización en Producción de Quesos de Comunidades Andinas, Provincia de Chimborazo

Abstract
This research is related to the pasteurization modeling process using solar thermal energy of low temperature through solar fl at collectors and to validate the technical and economical viability of the system required to produce craft cheese.
The approach let to estimate the reduction of production fees, work hours and CO2 emissions taking in account the commercial system implemented over pasteurization industries in the Andes communities at Chimborazo province in Ecuador.
The demand of heat required in the pasteurization process to produce 400 milk liters was simulated by a water system composed by: solar fl at collectors (85%), heat accumulator of 120 liters, GLP heater (15%). The approach predicts that the proposed system is optimum with fourth solar collectors are used 10 m2 of area. The technical and economical viability is predicted too, at least three years and reducing 85% of CO2 emissions as a environmental benefi t, reducing 127500 kg of emissions in 25 years.
This proposal let to maximize the solar thermal effi ciency considering solar followers, vacuum tubes collectors or by reducing the solar thermal heat (70%).
